In Navarre, in Northern Spain, there is a true wonder of nature. Ancestral Spring Fleur de Sel is the only one of its kind in the world.
This exceptional spring salt comes from a sea that fossilised 220 million years ago, now 700 metres above sea level in the Pre Pyrenees
Run by a family of master salt makers who have been producing pure and natural spring salt for generations and manually harvesting salt with the aid of only their expert hands and know-how — without any chemical processes or machines.
ANCESTRAL gets this salt after a slow evaporation process with a very gentle wind. It comes from the first crystallisation and involves harvesting the small crystals floating on the surface of the salt beds with great care and patience. Due to its slow evaporation, the salt is harvested either first thing in the morning or late in the day.
